Now here is a version on chicken salad that I can guarantee as a pleasant surprise to your palate- With a bite of perfectly ripe mango, a crunch of fresh spinach and a delightful blend of fresh herbs and spices, there’s no going back…

Ingredients:

One store bought rotisserie chicken (I prefer a rosemary lemon variety), shredded – I don’t keep the skin on, but it’s up to you of course

One mango, peeled and chopped to your liking

1/2 Cup of shredded coconut (feel free to toast these on the skillet for a few minutes which brings out some extra flavor & savor the golden hue)

3/4 cup of plain/vanilla yogurt (no mayo!)

2 tablespoons of the freshest lemon juice

1 tablespoon of dijon, honey mustard for a delicious twist

1 small bunch of fresh, torn basil leaves

1 teaspoon of ground tumeric and/or cayenne pepper

Salt and Pepper to your taste

…and finally, a crunchy bed of well washed spinach leaves for serving.

Recipe:

Combine all ingredients minus the spinach in a lovely big bowl, and give them a steady stir. (Reserve some of the toasted coconut!)

Serve atop the bed of spinach, and sprinkle with the remaining toasted coconut.

Et Voila! A tasty twist on a favorite classic that you will no-doubt repeat.
