One thing I love about cooking seasonally is that by the time you come around to a plethora of produce you haven’t truly enjoyed since a year prior, you find a whole new appreciation for the sights, smells and tastes of such long awaited flavors. My particular favorites of Spring’s bounty include vibrant zucchinis and ripe, juicy berries.

Is there anything more gratifying than a plate filled with color? Natural color that is, the kind that only comes from God’s green earth…The pungent red of beets, the oceanic navy of blueberries or the mouthwatering magenta of raspberries…These are the simple pleasures we must appreciate on a daily basis. Below, enjoy a few of my tried and true favorites devoted to Spring’s humble offerings.

Zucchini Carrot Chocolate Chip Loaf

Strawberries & Yogurt, sprinkled with flaxseed & wheat germ~served with toast and toppings.

Morning Oatmeal, topped generously with fresh berries, bananas and a drizzle of Maple Syrup. (See here for another variation)

There are times when I am simply uprooted by the natural flavors, colors and landscapes provided by this earth. From sunsets to strawberries, there is always something to be eternally grateful for.
