As the fourth of July comes around and national pride seems palpable, it seemed only fitting to attempt one of my favorite desserts to celebrate in red, white & blue…
Light as air, and decadently delicate, meringues are no simple feat. While they consist of a mere two ingredients (egg whites & sugar) whipped into peaks of perfection, they bake at a low heat of 200 degrees for a tantalizing 3 1/2 hours.
At their best, meringues conceal a series of textures evolving from crunchy to chewy…revealing the most whimsical flavors. In light of the holiday upon us I decided to whip up a crispy batch of Pavlova’s. Your traditional, cloudy dollop of meringue, topped with homemade whipped cream and only the ripest blueberries & strawberries—named after the world-famous Russian ballerina, Anna Pavlova.
Here’s to all of the men & women who fought and continue to fight for the freedom of our country. For the privilege of making our own choices and the luxury of liberty…Happy 4th!
