Sigh. Three weeks into Nutcracker and the countdown is slowly chipping away…Full houses & lavish applause leave us feeling equally wide-eyed and weary as we decorate the stage each night with steps so familiar…And what entertains those precious hours off between curtain calls you might wonder? All the sleeps and all the eats. Perhaps a Christmas movie or two…let us not forget Netflix, Adele, and undoubtedly, a solid number of treats! Parsnip Cake

Speaking of the Land of Sweets… Let’s talk Parsnips. The delicate, creamy looking carrot-type root veg that roasts to perfection but serves a secret, indulgent purpose otherwise known as Parsnip Cake! Comparable to it’s cousin Carrot Cake, this millennial version serves a delicate challenge to the savory recipes followed by the rest of winter’s produce.  IMG_4683Perfectly moist and a tid-bit sticky, this easy peasy confection is the perfect Holiday party contribution, plays beautifully with French Vanilla Ice Cream, and needless to say, quenches every little sweet tooth showing face during this decadent month of December… (Oliver’s too, mind you.)
